With washed processed coffee, the pulp – exocarp and partly the mesocarp – is mechanically removed from the coffee seed. Revealing parchment coffee with a layer of mucilage. This sugar-rich mucilage is then removed by fermentation, usually using water bins that hold large quantities of coffee. After fermentation, the parchment is washed a second time and then dried – mechanically or sun-dried. Washed processed coffee offers a clean and bright cup.
