The Kaffa region is widely recognized as the birthplace of coffee. According to legend, a 9th-century Ethiopian goat herder named Kaldi noticed his goats becoming unusually energetic after eating coffee cherries. While the story remains unverified, it highlights Kaffa’s deep historical connection to coffee and its influence on global coffee culture.
In recent years, coffee buyers have focused on renowned Ethiopian regions like Yirgacheffe, Sidamo, and Guji. However, as the coffee market becomes more volatile, the demand for exceptional alternatives has increased. Kaffa coffees, though still under the radar, provide outstanding value at a competitive price point. At Trabocca, we believe that Bitta Farm is showcasing the full potential of Kaffa’s terroir. Distinct regional flavors that stand out among other Ethiopian origins, scoring consistently between 85 and 87 points.
Founded in 1993, Bitta Coffee Farm set out to produce high-quality coffee while preserving Kaffa’s cultural heritage and improving farmers’ livelihoods. Covering 912 hectares at elevations of 1,900–2,050 meters, the farm thrives under the shade of indigenous trees within the ancient Kaffa forest. The region’s fertile clay loam soil, abundant rainfall, and rich biodiversity create the ideal conditions for slow cherry maturation, enhancing flavor complexity.
Bitta Farm cultivates JARC coffee varieties (74110, 74112, 74140, 8136), known for their quality and resilience. The farm operates 510 drying beds, processing coffee through washed, natural, and experimental methods to enhance cup quality. Additionally, Bitta Farm grows Ethiopian Korerima (black cardamom), a flavor note often found in its coffees.
Nestled among high-altitude mountains and lush valleys, Kaffa is home to some of the most ancient coffee varieties. The region’s long-standing farming culture and distinct microclimate contribute to its unique flavor profile. Kaffa coffees are often described as having sweet berry acidity, dried fruit notes, and a lingering spiced finish.
