With natural processed coffee, the entire cherry is dried. The time frame of drying varies per micro-climate, origin and weather conditions. Natural processed coffee absorbs more nutrients and sugars during drying. That is why natural coffees usually have a complex sweet flavour profile and a heavy rich body. Dry processed coffee is common in origins that are exposed to long periods of sunshine, such as Brazil and Ethiopia.
