Pulped natural processed coffee, also known as honey processed, has both the characteristics of naturals and washed coffees. It retains some of the acidity of washed coffee and the body of naturals.
The coffee is pulped, but a significant amount of mucilage remains on the parchment. With the mucilage attached, the parchment dries. Like natural coffees, the pulped natural method is often found in countries with long periods of sunshine. The pulped process is common among Brazilian coffee producers, where post-harvest experiments are popular ways to influence the cup profile.
