If you cross the Sidamo zone, from North to South, you enter Dara. Dara is woreda that borders the Yirgacheffe zone. The Schilcho washing station is one of Dara’s finest sites, besides the Bonko and Korate washing station.
Schilcho receives its cherries from three coffee communities in the Dara area. These farmers have a maximum of 2-hectares to grow their coffee. Besides coffee, you find that false banana and avocados are popular crops to have.
The smallholders of the three communities deliver their cherries to the Schilcho washing station. They pulp the coffee and ferment the remaining beans. Fermenting takes about 36 to 48 hours. The workers of Schicho use the clean water of mountain streams to rinse the coffee. Then, the parchment is spread thinly on elevated beds. Drying parchment takes about 7 to 10 days to complete.
The natural processed cherries are immediately dried on the elevated beds when they arrive at Schilcho. 18 days pass until these cherries find their way to the contracted miller in Addis Ababa.
