The Nossa Senhora de Fatima Estate is located in the Cerrado region in Minas Gerais. During the last 30 years, Minas Gerais has become the largest coffee producing state in Brazil. Coffee from the Cerrado region is known for its intense aromas and sweet flavors with tones of chocolate, caramel and nuts. 235 hectares of the estate are used for coffee production. All of this production is 100% organic and the farm is known internationally as a leader in the production of organic specialty coffees.
Brazilians have developed a method to produce what is known as pulped natural coffee. In this method, the coffee is pulped using the wet process, however the fermentation stage to remove the mucilage is omitted. The result is a coffee that retains a flavor profile that is a mix of those from the wet and dry processes. The pulped natural coffee processing method works best in regions where the humidity is low so the coffee’s mucilage can be dried quickly without fermentation occurring.
